Description
Chanterelle mushrooms, freshly picked from the forest and thrown into a frying pan with a little butter. Picking wild mushrooms is something which most people would love to try if only they could be absolutely sure they were picking an edible variety and not a life-threatening poisonous one. The risk and fear is too great for the majority of the population to even consider picking mushrooms. The same was true for me until I came to Sweden and was introduced to the Chanterelle mushroom (Cantharellus Cibarius), known here as kantarell. To be honest, I still dare not pick much else than these mushrooms. It was many years before I found my first Chanterelle. It had been a wet summer and I was picking blueberries when I spotted the orangey yellow glow from a group of chanterelles. They are often invisible, completely covered by moss or grass and can be very hard to find, but once you find one, there are usually many more close by. As I picked the mushrooms I could feel their distinctive funnel shape. From this photo you can see the way the gills on the underside are forked and extend down the stem. Chanterelle mushrooms have a wonderful aroma and taste. There's no mistaking these mushrooms!
